
Are you looking for a fun St. Patrick’s Day breakfast idea? Well then look no further!These rainbow pancake bites are the perfect colorful treat for you and your little leprechauns. And they are also super easy because I use a boxed pancake mix.
Ingredients/Supplies

- Pancake mix (just add water kind)
- Food coloring
- Fillings – strawberries, blueberries, sprinkles, chocolate chips, bananas, etc.
- Mini muffin tin
- Cooking spray
- Whipped cream
Instructions

Make pancake batter according to package.

Separate batter into seven parts. Use food coloring to sue each a different color of the rainbow.

Pour batter into muffin pan.

Chop/prep mix ins. Here is what I added in for each color:
- Red – strawberries
- Yellow – rainbow sprinkles
- Green – chocolate chips
- Blue – blueberries
- Purple – plain/nothing

Add mix ins to the batter in the muffin tins.

Place muffins in oven preheated to 350 degrees for 15-20 minutes.

Remove from tin when completely cooled.

Arrange in the shape of a rainbow on a plate and add some whipped cream clouds to the ends!

Your kids are going to love these, and they are great for on the go. Store leftovers in the freezer to microwave for another day, because rainbows are relevant any day of the year!
