The best thing about fall is pumpkin everything, am I right? Recently my friend brought pumpkin spice muffins along for our girls trip to the lake and I fell in love with them. And when she told me how easy they were to make I fell in love with them even more! When I made them for my kiddos I added mini chocolate chips because everything is better with chocolate, and they were gone in a flash. Check out the simple recipe below.
Ingredients
- 1 box spice cake mix (and ingredients needed to make the cake)
- 1 can pumpkin puree
- 1 cup mini chocolate chips
Recipe
Make the cake batter according to the instructions on the box.
Once you have mixed that together, add the can of pumpkin puree and beat until smooth.
Fold in chocolate chips.
Place cupcake liners in cupcake pan.
Fill each cup 2/3 of the way full.
Sprinkle additional chocolate chips on top.
Bake in oven according to the instructions on the cake mix box; but add an additional 3-5 minutes to the bake time.
Cool, serve and enjoy!
