Easter Brunch Cake Donuts

My children LOVE donuts. They also love baking. While the final product never turns out perfect when they help out, the joy of watching them learn and help far outweighs baking perfection. The baking and decorating of these Easter cake donuts was no different. So, gather up your ingredients, fasten your apron and bake these delicious donuts for your upcoming Easter celebration!

Ingredients

Donuts

  • 2 c. sifted cake flour (or regular flour, if using regular flour remove one tablespoon per cup)
  • 3/4 c. sugar
  • 2 tbs. baking powder
  • 1 1/2 tsp. vanilla
  • 2 eggs
  • 3 tbs. melted butter
  • 3/4 c. buttermilk

Chocolate Glaze

  • 1/2 c. chocolate chips
  • 2 tbs. butter
  • 2 tbs. corn syrup
  • 1-2 tbs. hot water

Vanilla Glaze

  • 1 c. powdered sugar
  • 1 tbs. milk
  • 1/2 tbs. vanilla

Easter Grass Topping

  • 1 c. coconut flakea
  • Green food coloring

Toppings & Supplies

  • Spring sprinkles
  • Jelly beans
  • Donut pan
  • Cooking spray

Instructions

Preheat oven to 425 degrees. Spray donut pan with non-stick cooking spray.

Sift together flour, sugar, baking powder and salt in a large bowl.

Beat in eggs, buttermilk and butter until just combined.

Scoop batter into a gallon-sized zip loc bag and snip off one corner. Squeeze the batter into the donut pan, about 2/3 full.

Bake donuts for approximately 9 minutes, or until the tops spring back when touched.

Allow to cool completely on a wire rack before removing.

Chocolate Glaze

Melt Chocolate chips, corn syrup and butter in the microwave for one minute.

Stir in 1 tablespoon of hot water adding more until the glaze is the desired consistency.

Spread on top of donuts and add sprinkles

Vanilla Glaze & Coconut Grass

Mix together powdered sugar, milk and vanilla extract until the sugar is completely dissolved.

Put coconut into Ziploc bag and add a few drops of green food coloring. Seal the bag and mix coconut around until it turns green.

Spread vanilla glaze onto donuts and then sprinkle green coconut on top of the glaze. Add a few jellybeans to look like Easter eggs and enjoy!
