
St. Patrick’s Day is a week away and we are pulling out all the stops because who doesn’t like a good holiday? I was in the mood to bake and after scrolling the internet I came across these cute and festive rainbow cupcakes with pot ‘o gold.
I was actually quite surprised with how much my kids loved these. I was apprehensive about the sour rainbow airheads but they were a hit! I bet these would make great leprechaun bait, too. Follow the steps below and be warned; your tongue may turn green after eating!!
Ingredients

- 1 box white cake mix (and ingredients needed on the box)
- 1 container vanilla frosting
- Food coloring
- Rolos
- Rainbow Airheads
- Mini marshmallows
- Gold sprinkles
Instructions

Prepare cupcake batter according to package.

When the batter is made add green food coloring and mix well.

Add cupcake liners to the cupcake tin, spray with oil or pam, and fill ¾ with batter. Bake according to instructions on the box. When finished baking, allow cooling completely.

Use green food coloring to dye the vanilla frosting green.

Frost the cupcakes.

Cut the rainbow airheads in half and place one or two on top of the cupcake in an arch shape. Use the frosting to make sure they stick.


Add marshmallows around the bottoms of the airheads to look like clouds.

Dip the wide end of a Rolo into frosting and then dip the frosted end into gold sprinkles. Place non-sprinkled end of the Rolo onto the cupcake to look like a pot of gold.
