Leprechaun Sugar Cookie Bars

I LOVE sugar cookies. Really though, who doesn’t?! And I love making them for all the holidays. But after cutting out and decorating close to 100 in December, I definitely was not in the mood to repeat that insanity. So, instead of rolling out dough, making a giant flour mess and baking for hours, I tried out this recipe for sugar cookie bars.

They taste great and I even made my own buttercream frosting (although not that well, I’ll admit). Change up the food coloring and sprinkles and you can make your own rendition for any holiday or season. Here is the recipe; hopefully your frosting looks a bit better than mine. 🤣😅

Ingredients

Cookies Bars

  • 1 c. softened, unsalted butter (2 sticks)
  • 1 c. sugar
  • 1 egg
  • 2 tsp. vanilla extract
  • 1 ½ tsp. baking powder
  • ½ tsp. Salt
  • 2 ¼ c. flour

Butter Cream Frosting

  • ½ c. softener, unsalted butter (1 stick)
  • 2 c.  powdered sugar
  • 2 tsp. vanilla extract
  • 1-2 tbs. milk
  • Green food coloring
  • St. Patrick’s Day sprinkles (for decorating)

Instructions

Preheat oven to 350 degrees.

Using a mixer, cream together butter and sugar for around 30 seconds. Add egg and vanilla and continue beating.

Once mixed well, add baking powder, salt and flour. Mix for about 30 seconds. No need to over mix.

Spray a 19×13 pan with cooking spray and then add parchment paper. Push the parchment down so it sticks to the paper (this is optional).

Drop dough in spoonfuls into pan. Press down on the dough until it covers the pan.

Bake at 350 degrees for approximately 15 minutes.

Allow to cool completely.

For the frosting, beat the butter until very creamy. About two minutes.

With the mixer still on medium speed, beat in the powdered sugar and vanilla. About 1-2 minutes or until light and fluffy.

Add about half of the milk and continue beating. You can add the remainder of the milk if the frosting seems too thick.

Beat in the food coloring until well mixed.

Spread frosting over cookie bars.

Add sprinkles, cut and serve!
