Earth Day Cookies

On honor of our beautiful planet and in celebration of Earth Day on April 22, we made the yummiest Earth Day cookies.

Normally I don’t make anything without chocolate our icing so I was happy when my kids and my husband’s hockey friends devoured them in less than 24 hours.

These cookies are so colorful and delicious, and adding the heart was a symbolic reminder that we need to love and care for our planet. Recipe and baking instructions are below!

Ingredients

  • 1 stick unsalted butter at room temp
  • 1 c. granulated sugar
  • 1 large egg
  • 2 tsp. vanilla extract
  • 2 c. all purpose flour
  • 2 tsp. baking powder
  • Blue & green gel food coloring (I didn’t have green so I mixed blue and yellow)
  • Heart sprinkles

Supplies

  • Baking sheet
  • Parchment paper
  • Mixer

Baking Instructions

Preheat oven to 350 degrees and line baking sheet with parchment paper.

Cream together butter and sugar until fluffy.

Add egg and vanilla extract.

Add flour and baking powder until well blended.

Separate the dough in half and set one half aside.

Add blue food coloring to dough and mix until you reach your preferred color.

Next, switch out the dough in the blender and add green food coloring and mix until desired color.

Pinch off pieces of green and blue dough and mold into a ball. Make sure the colors stay distinct and it isn’t just half blue/half green. It should look like the earth/a globe, obviously!

Place the dough balls on the parchment lined baking sheet and bake in the oven for 8 minutes.

Once baked, immediately transfer the baking sheet onto a wire wrack and place one heart-shaped sprinkle onto the top of the cookie while they are still hot.

Allow to cook and enjoy!
