
Who doesn’t love a good themed cookie? I absolutely love how cute these pencil cookies turned out. They’re made using vanilla sugar wafer cookies (you know, the kind that used to come in a package with vanilla, chocolate and strawberry) that remind me of my childhood.
I think these will make the perfect treat in their first day of school packed lunch, or maybe on an after school snack board.
Ingredients/Supplies

- Vanilla sugar wafer cookies
- Pink melting chocolate
- White melting chocolate
- Mini chocolate chips
- Knife
- Cutting board
- Parchment paper
Instructions
Use your knife to cut the two corners off one end of each cookie so it forms a point like the tip of a pencil.

Melt the pink frosting according to the package instructions.

Dip the non-pointed end of the cookie into the melted pink chocolate to create an eraser. place on parchment paper and allow to harden (speed up the process in the freezer!).

Met the white chocolate according to the package instructions. Dip the pointed end of the cookie into the melted white chocolate to form the shaved point of the pencil. Place back on the parchment paper.

Add one small mini chocolate chip to the tip of the cookie point to make the lead. Be sure to do this before the chocolate hardens.

Once all chocolate has hardened, peel off the parchment paper and serve or store in a container.
