Easter Cookie Cake

There are two things I love in this world: cookie cake and Cadbury Mini Eggs. This Easter cookie cake combines those two loves together to equal an OBSESSION. It is extremely easy to make and turns out looking like you bought it from a real bakery. I made this last year for Easter and plan to make it basically every year going forward. I will display it on a cake stand on our dessert table and relish in everyone “OOOing” and “AHHHing”.

Ingredients/Supplies

  • 1 package premade cookie dough (I like the ones cut into squares)
  • Easter M&Ms
  • Cadbury Mini Eggs
  • Easter/Spring sprinkles
  • Vanilla frosting
  • Frosting piping bag and tips
  • Pie dish
  • Spoon

Instructions

Preheat oven according to package instructions. Spray your pie dish. Add all of the cookie dough to the pie dish.

Smash/flatten out the cookie dough with the back of a metal spoon. Make sure the dough is even and covers the whole dish.

Add some Cadbury Mini Eggs to the dough.Press them in slightly so they stay.

Next, add Easter M&Ms to the top of the dough.Press these in as well.

Top with some sprinkles and bake according to package instructions.

When finished baking, allow to cool completely. Fill your piping bag with vanilla frosting and choose the tip of your liking.

Pipe dollops of frosting all the way around the perimeter/edges of the cookie cake.

Add some more sprinkles to the frosted edges.

Cut and serve! This makes a great dessert for Easter brunch or easter dinner. Skip adding the Cadbury Mini Eggs for a basic spring-themed cookie cake!
