Oh. my. goodness. These rainbow sugar cookies are everything you didn’t know you needed to celebrate St. Patrick’s Day this year (or just to celebrate spring). They are really easy to make because you can use store-bought sugar cookie dough. Essentially, you are just decorating them!

Ingredients/Supplies

• Sugar cookie dough
• Vanilla frosting
• Blue food coloring
• Mini marshmallows
• Rainbow Airheads
• Gold sprinkles

Instructions

Bake sugar cookies according to instructions on the package. When done baking, allow to cool completely.

While cookies are baking, mix vanilla frosting with blue food coloring to make a light, “sky” blue.

Frost cookies with blue frosting.

Cut a Rainbow Airehead in half. Fold it into an arch and secure each side to the cookie.

Add a few mini marshmallows to the end of each “rainbow”.

Sprinkle the cookie with gold sprinkles to finish it off!
