
As if I didn’t eat enough frosted sugar cookies over Christmas, here I am making an entire baking sheet of sugar cookie bars. These cookies are a bit different though. They are MUCH thicker and I even gave homemade butter cream frosting a try. Apparently I over whipped it and also it was a bit gritty because instead of letting my butter get to room temp naturally I popped it in the microwave for a few seconds. So don’t be like me. Set your butter on the counter now.
Regardless of the texture, the frosting still tasted fantastic and the whole pan was gone in 24 hours (we shared). The pink frosting and Valentine-themed sprinkles make these the perfect sweet treat for your next V-Day party!

- Baking sheet
- Parchment paper
- Rolling pin
- Valentine sprinkles
- Rubber spatula
Cookies
- 1 1/2 c. butter (room temp)
- 2 c. sugar
- 4 eggs
- 1 tsp. vanilla extract
- 5 c. all-purpose flour
- 1/2 tsp. baking powder
- 2 tsp. salt
Butter Cream Frosting
- 1 c. butter (room temp)
- 5 c. powdered sugar
- 1 tsp. vanilla extract
- 3 tbsp. heavy cream
- Pink food coloring
Baking Instructions
Preheat oven to 350 degrees and line baking sheet with parchment paper.
Whisk together flour, baking powder and salt in a separate bowl.
Using an electric mixer, cream together butter and sugar for 2-3 mins on medium speed.

Add in eggs and vanilla and mix for another 1-2 mins.
Slowly add in the flour mixture until a soft dough forms.

Spread dough onto the baking sheet using a spatula. Sprinkle flour on rolling pin and use to smooth out/spread the dough.

Bake for 15-20 mins. Allow to cool completely after removing from oven.
While cookies are baking, make the frosting!
Using your electric mixture, cream the butter for 2-3 mins (be sure to scrape the sides of the bowl with a rubber spatula to ensure all butter is creamed).

Add powdered sugar, vanilla and cream slowly until fully incorporated. You can add additional cream as necessary. Be careful not to over whip!

Add food coloring and mix together using spatula.

Spread frosting over cooled cookies and top off with sprinkles.

Cut and enjoy. Warning: these will go fast!!
